So, no having to closely watch the cooking to prevent the sugar from burning. If you have a food processor or high-speed blender, you can easily make it in 5 minutes.

To make this healthy, low sugar, and vegan caramel sauce, the only 4 ingredients you need are

Dates

Full fat coconut milk, from a can

Sea salt

(optional) Pure stevia extract powder

Raw Vegan Caramel Sauce

As you know, I’m not a big fan of using sugar in my recipes. Don’t get me wrong. I do like sweet treats, such as cookies, ice cream, and cakes, et al. However, I prefer natural sweeteners, such as stevia, coconut sugar, agave nectar, and dates, et al. to refined sugar and brown sugar. Lately, I’ve been fond of using dates to sweeten my cookies and other sweet treats. Although it doesn’t have stevia’s zero calorie/glycemic index, it does provide dietary fibers, vitamins, and minerals. I especially like to use dates in some recipes because of the sticky texture it creates that stevia can’t offer. It also gives a unique sweetness to recipes and complements the stevia. Like in this recipe, the caramel flavor is all from the dates. Sounds pretty good, right?

How to make this raw vegan caramel sauce?

  2. Add the remaining ingredients and blend until it is somewhat smooth. That’s your homemade healthy vegan caramel sauce. You may see some small pieces of dates in the sauce after blending. Don’t worry! It won’t affect the flavor at all.

After I served my husband a slice of my homemade gluten-free cake with a spoonful of this sauce on it, he said: “it’s caramel sauce” even before I told him what it was. So he immediately recognized the caramel flavor but couldn’t tell at all that it was from dates. Now you know the natural, secret ingredient!

Better yet, it contains much less sugar than regular caramel sauce which is made from sugar. Tools: Food processor or high-speed blender, measuring cup and spoon, rubber spatula

Ingredients
  • 1 cup full-fat coconut milk, from can
  • 7 pitted Medjool dates
  • ¼ teaspoon sea salt
  • (optional) ¼ teaspoon pure stevia extract powder (Now brand)
Instructions
  1. Add the pitted Medjool dates into a blender or food processor and blend until it forms a big sticky ball.
  2. Add the remaining ingredients and blend until it is somewhat smooth. It’s normal to see some small pieces of dates in the sauce after blending. It won’t affect the flavor at all.
  3. Transfer the sauce into a clean container or jar. It can be kept in refrigerator up to 5 days.
Notes
The brand of the coconut milk I used in this recipe is Golden Star. I bought it from local Walmart store. It doesn’t contain any gum.
