Mint Lime Watermelon Kefir Slushie

Watermelon Kefir Juice
  • 16 oz (454 grams) diced watermelon cubes
  • 10 mint leaves
  • ¼ cup water kefir
Watermelon Slushie
  • 24 oz (680 grams) frozen diced watermelon cubes
  • ¾ cup watermelon kefir juice
  • 1 lime, juiced
  • ⅛ teaspoon sea salt
  • (optional) 2 mint sprigs for garnishing
  1. Use a knife to cube a ripe seedless watermelon. Blend the 16 oz of watermelon cubes with mint leaves until smooth and then pour it through a fine-mesh strainer over a large bowl to collect the juice. Discard the pulp.
  2. Pour the watermelon juice into a glass jar and add water kefir. Cover with lid and let it stand at room temperature for at least 18 hours.
  3. Line the baking dish with parchment paper and then place the 24 oz of diced watermelon cubes into the baking dish. Freeze 4 hours until firm.
  4. Add all watermelon slushie ingredients into a blender. Blend until smooth. Garnish with mint sprigs and serve immediately.
  5. (Optional) Add natural sweetener, such as pure stevia extract powder, for extra sweetness.
