However, the Medjool dates, coconut oil, and peanut butter also do a good job of holding the dough together in this recipe. Better yet, the combination of Medjool dates and stevia add a pleasant sweet caramel-like taste as well as fiber, while keeping the bites low in sugar.
According to Leo, the dried goji berry is “the red thing”. They are chewy and less sweet than raisins. Just imagine, you can enjoy the rich and creamy peanut butter, dark and strong chocolate, and the chewy goji berries with every bite.
Before you run to your kitchen to make these healthy peanut butter energy bites, I want to tell you about one of the handiest tools for stirring peanut butter. Last year, my handy, creative husband used a rock tumbler to blend/stir all natural peanut butter without even opening the jar. - In a food processor, blend the soft dates until it forms a big ball. Add the remaining ingredients except the goji berries and chopped chocolate. Blend until it forms soft crumbs. The dough should stick together if you press it a little bit between your fingers.
- Transfer the dough into a mixing bowl. Mix in goji berries and chopped chocolate with rubber spatula.
- Take an appropriate amount of dough and press and shape to form a 1” ball. Finish all dough. It should make 9 balls.
- If you prefer a firmer texture, place the energy bites into a parchment paper lined baking dish and keep a 1” space between each ball. Cover the baking dish with lid or plastic wrap and refrigerate 1 hour or until firm.
