I miss not being able to use the traditional Chinese red vinegar I grew up with in China due to my gluten-free cooking. For years, I substituted it with apple cider vinegar. Actually, I should say 99.5% of the time I use apple cider vinegar in my cooking.
How about you? Is there a specific type of vinegar you like or miss as a result of being on the gluten-free diet?
If only I could find a better substitution! I mean, a much better one. I was shocked and so excited when I had a small sip of the balsamic vinegar.
Yes, it’s sour! But besides sour, I can taste the rich flavors that nearly resemble the Chinese red vinegar I’ve missed for so many years. Whoohoo!
We used to buy balsamic vinaigrette dressing from the store. However, my husband, Brad, has some trouble with the gum, such as xanthan gum or cellulose gum, that the store-bought vinaigrette dressing has. In addition to that it’s very high in salt. With a bottle of good quality balsamic vinegar on hand, making our own won’t be any problem at all.
This homemade mustard seeds strawberry balsamic vinaigrette dressing is thick without the addition of any gum ingredients. The natural pectin and fibers from strawberries did the trick. Keep in mind, a package of good quality strawberries can make a big difference on the taste of the dressing.
In the end, I like to add some mustard seeds and one small dry clove to give the strawberry balsamic vinaigrette dressing a slight pungent taste. Not too much but enough to taste.
Last but not the least, you can totally control how much salt you want to add to the dressing. Making your own healthy, low carb, and low sodium dressing is just this simple. This mustard seeds strawberry balsamic vinaigrette dressing is great for almost any kind of salad.
