Making this pea shoots mango rainbow salad requires no cooking skill. It’s elegant and perfectly simple!
Seriously, putting together a fresh vegetable salad is foolproof. I saw you nodding.
So, if you’re having trouble finding the perfectly healthy and exciting salad to bring to a potluck party, I have a solution for you.
The fun part of making this beautiful pea shoots mango rainbow salad is finding, combining, and balancing all the colorful vegetables. In addition to being a great looking colorful salad, it also has an award winning taste.
The flavors of pea shoots, radish, red cabbage, cucumbers, and green leafy lettuce have a great balance in both taste and textures. It’s:
Earthy
Refreshing
Crunchy
Sweet
Pungent (slightly)
Beyond the vegetables, the mango is the best choice for this salad. I prefer small yellow mango to the larger red-green mango. Yellow mangos seem to have stronger tropical flavors. They’re also sweeter and juicier.
I used roasted peanuts to add some extra crunchiness. You can use any kind of nuts you like. It’s awesome and you can’t go wrong when serving it with balsamic vinaigrette dressing. Try this homemade mustard seed strawberry balsamic vinaigrette dressing.
We hope you get as excited about this beauty as we do. Happy summer!
