Beyond the vegetables, the mango is the best choice for this salad.  I prefer small yellow mango to the larger red-green mango. Yellow mangos seem to have stronger  tropical flavors. They’re also sweeter and juicier.

I used roasted peanuts to add some extra crunchiness.  You can use any kind of nuts you like. It’s awesome and you can’t go wrong when serving it with balsamic vinaigrette dressing. Try this homemade mustard seed strawberry balsamic vinaigrette dressing.

Ingredients
  • 2 medium size radishes
  • 6 oz leafy greens chopped (I used green romaine lettuce in this recipe)
  • 2 oz red cabbage shredded
  • 1 oz pea shoots
  • 1 yellow mango
  • 2 inch section English cucumber sliced
  • 3 tablespoons roasted peanuts or other nuts
Instructions
  1. Gently toss all ingredients together before serving. Serve with balsamic vinaigrette.
