Simple Cauliflower Stir-Fry

I cook stir-fried vegetable almost every day. Vegetables can be cooked in a wok with very hot cooking oil in just a few minutes. They are “fast-food” but in a much healthier way. Today’s post is about how to make this cauliflower stir-fry with a few simple ingredients in less than 10 minutes.

Besides boiling and steaming, stir frying is a commonly used cooking technique in Chinese cuisine. Heat a small amount of cooking oil in a hot wok, then toss in spices and vegetables. Give it a quick stir. That’s pretty much about it. To dress the plain cauliflower, I used dried chili pepper, fresh garlic, ginger, and green onion. By adding a couple spoonfuls of water in the middle of frying, these cauliflowers came out with just the perfect tenderness, not too soft and not too crunchy. If you’d like to make a baby/toddler friendly version, you can remove the hot chili pepper from the ingredients.

1. Rinse and cut the cauliflower head into small florets.

2. Cut green onion into 2 inch pieces. Mince ginger and garlic. Cut dried chili pepper into ¼ inch pieces.

3. Heat a wok or cast-iron pan over high heat until it is smoky hot. Add cooking oil (vegetable or canola oil) and reduce the heat to medium high. Toss in green onion, ginger, chili pepper, and garlic. Stir quickly.

4. When the spices are fragrant, add cauliflower florets. Stir continuously and let the oil evenly coat the cauliflower florets. Sprinkle with salt and fry for 3 minutes. Add 1-½ tbs water (per pound cauliflower) and then continuously stir and fry for another 3 minutes or until the floret stalks start to become translucent.

5. Garnish with green onions and serve warm.

Tools: Knife, cutting board, measuring spoons, 10-12” cast-iron skillet and metal spatula
Servings: 2 -4 servings
Ingredients
  • 16 oz fresh cauliflower
  • 1 small dried chili pepper
  • 2 green onions
  • 1 clove garlic minced
  • 1 tsp minced fresh ginger
  • 2 tsp canola oil
  • ¼ tsp salt
  • 1-½ tbs water
  • green onion curls for garnishing
Instructions
  1. Rinse and cut the cauliflower head into small florets.
  2. Cut green onion into 2-inch pieces and dried chili pepper into ¼-inch pieces.
  3. Heat cast-iron skillet over high heat until it is smoky hot. Add oil and reduce the heat to medium high. Toss in green onion, ginger, chili pepper, and garlic. Stir quickly.
  4. When the spices are fragrant (about 30 seconds), add cauliflower florets. Stir continuously and let the oil evenly coat the cauliflower florets. Sprinkle with salt and fry for 3 minutes.
  5. Sprinkle 1-½ tbs water onto the florets and then continuously stir and fry for another 3 minutes or until the floret stalks start to become translucent. Serve warm.
Recipe Notes

To make a baby/toddler friendly version, eliminate chili pepper and reduce the amount of spices and salt if necessary.
