1ozunsweetened baking chocolate barschopped into small pieces
In a food processor, blend the soft dates until it forms a big ball. Add the remaining ingredients except the goji berries and chopped chocolate. Blend until it forms soft crumbs. The dough should stick together if you press it a little bit between your fingers.
Transfer the dough into a mixing bowl. Mix in goji berries and chopped chocolate with rubber spatula.
Take an appropriate amount of dough and press and shape to form a 1” ball. Finish all dough. It should make 9 balls.
If you prefer a firmer texture, place the energy bites into a parchment paper lined baking dish and keep a 1” space between each ball. Cover the baking dish with lid or plastic wrap and refrigerate 1 hour or until firm.
