You only need 4 ingredients to make this vegan caramel sauce. On top of being vegan, it’s raw vegan, which means no cooking is involved. Better yet, it contains much less sugar than regular caramel sauce which is made from sugar. Tools: Food processor or high-speed blender, measuring cup and spoon, rubber spatula

1cupfull-fat coconut milkfrom can
7pitted Medjool dates
optional ¼ teaspoon pure stevia extract powder (Now brand)
Add the pitted Medjool dates into a blender or food processor and blend until it forms a big sticky ball.
Add the remaining ingredients and blend until it is somewhat smooth. It’s normal to see some small pieces of dates in the sauce after blending. It won’t affect the flavor at all.
Transfer the sauce into a clean container or jar. It can be kept in refrigerator up to 5 days.
The brand of the coconut milk I used in this recipe is Golden Star. I bought it from local Walmart store. It doesn’t contain any gum.
