Heat a sauté pan over medium heat. Roast sesame seeds and walnuts for approximately 4 minutes. Stir continuously to prevent burning. Adjust heat if necessary. Set the roasted sesame seeds and walnuts aside.
In the same sauté pan, roast sweet rice flour until the rice flour turns slightly brown. Approximately 5 minutes.
Let the roasted sesame seeds, walnuts, and sweet rice flour cool for 5 minutes. Transfer them into food processor and then add stevia. Blend until it’s a fine powder. Use a rubber spatula to fold down the mixture and pulse intermittently if necessary.
Transfer the powder into an airtight container and store in refrigerator to keep it fresh.
To make the hot cereal: In a saucepan, bring ½ cup water to boil. Add 2-1/2 tbs cereal powder into the hot water immediately. Stir continuously. Let the cereal stand for 2 minutes to thicken. Serve warm.
You can also replace half the amount of sweet rice flour with oat flour (gluten-free if desired) to increase the healthy benefits.
