    • 2 tablespoons rice vinegar

    • 4 tablespoons low-sodium soy sauce

    • 1 teaspoon light brown sugar

    • 4 small red chilis finely chopped

    • 3 tablespoons canola oil divided

    • 8 ounces firm tofu cubed

    • 1 1/4 cups julienned carrots

    • 8 ounces cremini mushrooms sliced

    • 8 ounces snow peas

    • 1/2 cup thinly sliced green onions

    • Alternative Ingredients:
    • Tamari replaces soy sauce for gluten-free

    • Maple syrup replaces brown sugar for a different sweetness

    • Bell peppers replaces snow peas for a different crunch

    • Olive oil replaces canola oil for a different flavor

    Directions

    • Soak Noodles – Place the wide rice noodles in a large bowl and cover with warm water. Let them soak for about 30 minutes until they are soft enough to wrap around your finger. Drain and rinse with cold water.Delightful Vegan Chow Fun
