A Weeknight Delight

When I think about comfort food that’s quick to prepare, the first thing that comes to mind is my Quick Chickpea Curry. This dish is my go-to when I need a meal that’s not only flavorful but also healthy and easy to whip up. The Quick Chickpea Curry comes together in just 30 minutes, making it perfect for busy weeknights. The blend of spices and the freshness of cilantro bring a delightful vibrancy to this simple yet satisfying dish.

The Magic of Simplicity

The magic of Quick Chickpea Curry lies in its simplicity. I start by sautéing onions, garlic, and ginger, which creates an aromatic base for the curry. Adding spices like cumin, coriander, and turmeric infuses the curry with rich, warm flavors. The diced tomatoes and chickpeas are then added, simmering together to form a hearty, comforting stew. The beauty of this Quick Chickpea Curry is that it’s versatile—you can adjust the heat and sweetness to match your taste.

Perfect Pairings

One of my favorite things about Quick Chickpea Curry is how well it pairs with other sides. I love serving it with steamed basmati rice or warm naan bread to soak up every bit of the delicious sauce. For a low-carb option, cauliflower rice works wonderfully too. The curry is also perfect for meal prepping; it tastes even better the next day after the flavors have melded together.

Chef’s Notes- Quick Chickpea Curry

  • Sauté Spices Thoroughly: Take the time to sauté the spices with the onions, garlic, and ginger. This step is crucial for developing a deep, rich flavor in the curry. Cook them until they’re fragrant, but be careful not to burn them.
  • Adjust Heat Level: The amount of chilies used can significantly affect the spiciness of the curry. Start with a smaller amount and taste as you go, adjusting according to your heat preference. For a milder dish, remove the seeds from the chilies or use less.
  • Sweetness Balance: The addition of brown sugar helps balance the flavors and cut through the heat. Feel free to adjust the sweetness to your taste. If you prefer a different sweetener, options like maple syrup or agave nectar work well.
  • Citrus Freshness: Lemon juice brightens up the curry and adds a fresh, tangy note. Adjust the amount based on your preference, and add more if needed before serving to enhance the flavor.
  • Texture Variations: For a chunkier curry, use fewer canned tomatoes or add some fresh diced tomatoes. If you prefer a smoother texture, you can blend part of the curry before adding the chickpeas.

Ingredients

  • Base Ingredients

  • 3 tablespoons olive oil (or any neutral oil)

  • 1 medium yellow onion finely chopped

  • 1 tablespoon ground cumin

  • 1 teaspoon ground coriander

  • 1 teaspoon ground turmeric

  • 1 teaspoon chili powder

  • 1 teaspoon garam masala

  • 3/4 teaspoon sea salt (divided)

  • Aromatics

  • 6 cloves garlic minced (about 3 tablespoons)

  • 2 tablespoons fresh ginger minced

  • 2-3 fresh jalapeños or serrano peppers sliced with seeds (adjust to taste)

  • Main Ingredients

  • 1 (28-ounce) can diced tomatoes (preferably without citric acid)

  • 2 (15-ounce) cans chickpeas drained but not rinsed

  • Finishing Touches

  • 2-3 teaspoons brown sugar (or any sweetener of choice)

  • 2 tablespoons lemon juice (plus more to taste)

  • 1/2 cup fresh cilantro leaves chopped

  • Alternative Ingredients:
  • Oil: Canola oil or sunflower oil can replace olive oil.

  • Chilies: Use red pepper flakes if fresh chilies are unavailable.

  • Sweetener: Maple syrup or agave nectar can substitute brown sugar.

  • Cilantro: Parsley can be used if cilantro is not preferred.

Directions

  • Sauté Aromatics – Heat a large nonstick pan over medium heat. Add olive oil and chopped onion. Sauté until the onion becomes translucent (about 5 minutes). • Add Chilies and Tomatoes – Add sliced jalapeños or serrano peppers to the pan and cook for another minute. Pour in the diced tomatoes and bring the mixture to a simmer. Add the drained chickpeas to the pan along with the remaining sea salt. Stir well to combine all ingredients.Quick Chickpea Curry_ post 2
  • Simmer – Reduce heat to low and let the curry simmer uncovered for about 15-20 minutes until it thickens to a stew-like consistency. Stir occasionally to prevent sticking. Yes, you can use dried chickpeas. Make sure to soak them overnight and cook them until tender before adding them to the curry. Adjust the cooking time accordingly.

What can I use if I don’t have garam masala?

If you don’t have garam masala, you can create a substitute by combining equal parts ground cumin, coriander, and cinnamon with a touch of cloves and cardamom.

Can I freeze this curry?

Absolutely! This curry freezes well. Let it cool completely before transferring it to an airtight container. It can be frozen for up to 3 months. Reheat thoroughly before serving.

How can I make this dish less spicy?

To reduce the spiciness, you can use fewer chilies or remove the seeds from the chilies. Additionally, you can add a dollop of coconut yogurt or a splash of cream to mellow the heat.

What are some good vegetable additions?

You can enhance the curry with vegetables like spinach, bell peppers, peas, or cauliflower. Add them towards the end of cooking to keep them tender-crisp.
