  • Homemade Mozzarella Cheese
  • 1 batch of your favorite homemade mozzarella cheese (saucy consistency)

  • Quesadilla Filling
  • 1 can black beans, drained and rinsed

  • 1 cup sweet corn kernels

  • 1 cup diced bell peppers (use a mix of colors for variety)

  • 1/2 cup sliced black olives

  • 1/4 cup diced pickled jalapenos

  • 1/2 cup chopped fresh green onions

  • Tortillas
  • 4 large tortillas (8-10 inches)

Directions
