The Bright Idea

My Favorite is Vibrant Citrus Fruit Salad and It all started when I was planning a summer BBQ and wanted something that would make my guests say “wow” when they saw it. I knew I wanted a fruit salad, but not just any fruit salad. I imagined a colorful dish that would be as refreshing as a summer breeze. As I wandered through the farmers’ market, the vibrant colors of watermelon, mangoes, and pineapples caught my eye. I could almost taste the sweet and tangy flavors just by looking at them. That’s when it hit me—why not create a fruit salad that’s not only delicious but also looks like a burst of summer on a plate?

Crafting the Perfect Dressing

Back in my kitchen, I got to work on the citrus dressing. The idea was to make something that would bring all the flavors of the fruit together. I mixed freshly squeezed orange, lemon, and lime juices with a touch of pure maple syrup. The arrowroot powder would help the dressing thicken just right. As I stirred the mixture on the stove, the aromas of cinnamon and ginger filled the air. It was a blend that made my mouth water. Once the dressing had cooled, it was time to get creative with arranging the salad.

Ingredients

  • Citrus Dressing
  • 3 tablespoons freshly squeezed orange juice

  • 3 tablespoons freshly squeezed lemon juice

  • 3 tablespoons freshly squeezed lime juice

  • 1.5 teaspoons pure maple syrup

  • 0.75 teaspoon arrowroot starch

  • pinch ground cinnamon

  • pinch ground ginger

  • 4 cups mixed salad greens

  • 3 cups diced watermelon

  • 2 ripe mangoes, peeled and sliced or chopped

  • 2 cups fresh pineapple chunks

  • 2 cups halved green grapes

  • 1 cup fresh blueberries

  • 2 cups fresh blackberries

  • 2 cups halved red grapes

Directions

  • Prepare Dressing – In a small saucepan, combine orange juice, lemon juice, lime juice, maple syrup, arrowroot starch, ground cinnamon, and ground ginger. Whisk until the arrowroot is fully dissolved. Heat over medium-high heat while stirring continuously until the mixture thickens slightly (about 3-5 minutes).
