  • 1/2 cup diced carrots

  • 1/2 cup diced celery stalks

  • 3 cloves garlic minced

  • 1 teaspoon fresh rosemary leaves or 1/4 teaspoon dried rosemary

  • 8 cups chopped kale from 1 small-to-medium bunch

  • 1/4 cup white whole-wheat flour

  • 3 cups low-sodium vegetable broth

  • 1 can white beans rinsed and drained

  • 1/2 teaspoon kosher salt

  • 1/2 teaspoon ground black pepper

  • For the Biscuits

  • 1 cup white whole-wheat flour

  • 1 teaspoon baking powder

  • 1/4 teaspoon baking soda

  • 1/4 teaspoon kosher salt

  • 1/4 teaspoon ground black pepper

  • 3 tablespoons cold unsalted butter cut into small pieces

  • 3 tablespoons finely chopped fresh chives

  • 1/2 cup cold buttermilk

Directions

  • Prepare the Filling: Preheat your oven to 350°F. Lightly grease a 10-inch cast iron skillet or a similar-sized baking dish with cooking spray. Heat 2 tablespoons of olive oil in a large pot over medium heat. Add the chopped onion, diced carrots, and diced celery; cook for about 4-6 minutes until the vegetables soften.
