That’s when I thought, “Why not turn it into a salad?” The result was a Plant-Based Big Mac Pasta Salad that’s just as satisfying as the original burger, but lighter and more wholesome.

When I started working on the Plant-Based Big Mac Pasta Salad, I knew it had to have all the key ingredients of the classic burger — the pickles, the tangy dressing, the lettuce, and of course, a plant-based “beef” option. I used whole wheat pasta as the base to keep it filling, and I made a special sauce using vegan mayo, mustard, and a touch of vinegar to mimic that famous Big Mac sauce.   • 1/4 teaspoon sea salt

  • Elbow macaroni: Use gluten-free pasta for a gluten-free version.

  • Silken tofu: Substitute with non-dairy yogurt for a dairy alternative.

  • Maple syrup: Replace with agave nectar or honey if not vegan.

  • Tahini: Substitute with sunflower seed butter or almond butter.

Directions
