This Tropical Biryani is, without a doubt, the most controversial and surprisingly delicious dish to ever come out of my kitchen. It’s the recipe that gets the most skeptical raised eyebrows when I describe it, and the most wide-eyed, amazed reactions after the first bite. It’s a dish that proves that sometimes, the craziest ideas are the most brilliant.

My journey to this recipe began on a hot summer afternoon. I was craving the deep, aromatic comfort of a traditional biryani, but at the same time, I wanted something bright, fresh, and sunny to match the weather. The two cravings seemed completely at odds with each other. In my fridge, I had a can of full-fat coconut milk and a perfectly ripe, golden pineapple that was practically begging to be used. A wild, almost sacrilegious thought popped into my head What if I combined them?

When I mentioned my idea for a Tropical Biryani to my husband, he looked at me like I had suggested putting ketchup on ice cream. “Pineapple?   • ¼ cup plus 1 tbsp plant-based milk almond or cashew

  • 10 –12 saffron threads

  • Rice Aromatics
  • 1½ cups basmati rice rinsed until water runs clear

  • 2 bay leaves

  • 1 ″ cinnamon stick cracked

  • 4 cloves

  • 1 black cardamom pod crushed

  • 2 green cardamom pods lightly bruised

  • 1 tsp black peppercorns

  • 1½ tsp kosher salt for rice water

  • Jackfruit Base
  • 1 20 oz can young green jackfruit in brine, drained and patted dry

  • 2 tbsp neutral oil avocado or sunflower

  • Curry Masala
  • 2 tbsp neutral oil

  • 1 medium onion thinly sliced

  • 2 tsp freshly grated ginger

  • 4 garlic cloves crushed

  • 2 –3 green chilies slit

  • 2 medium tomatoes diced

  • 1 tsp ground coriander

  • ½ tsp ground cumin

  • ¼ tsp turmeric powder

  • 1 tsp garam masala

  • ½ tsp red chili powder adjust for spice

  • ¼ cup coconut-based yogurt

  • ½ cup fresh herbs mint and/or cilantro, chopped

  • Alternative Ingredients
  • plant-based milk → oat milk or soy milk soak saffron

  • neutral oil → light olive oil or grapeseed oil

  • young jackfruit → shredded oyster mushrooms or artichoke hearts

  • coconut yogurt → vegan cashew yogurt or dairy yogurt if not vegan

  • basmati rice → jasmine rice shorter cook time

  • green chilies → jalapeños or chili flakes

  • fresh herbs → dried mint/cilantro reduce by half

Directions

  • Rice Saffron Prep – Soak basmati rice in a bowl of cold water for 30 minutes to remove surface starch (approx. 30 min).   • Spice Infusion – Bring 6 cups of water to a rolling boil in a heavy pot over high heat (5 min). Add bay leaves, cinnamon, cloves, cardamom, peppercorns, and 1½ tsp salt; let the spices steep for 2 min to release aroma.   • Rice Cooking – Tip in drained rice when the spice-water is bubbling vigorously. Keep uncovered and simmer on high for 8–10 min, stirring once to prevent sticking. Drain the rice in a colander as soon as grains are ¾ cooked—firm but tender.
  • Jackfruit Sauté – Heat 2 tbsp oil in a nonstick pan over medium heat for 1 min. Add jackfruit chunks and press lightly; cook 3–4 min per side until golden and crisp.   • Masala Base – In a dutch oven, warm 2 tbsp oil over medium heat. Sauté onions until soft and translucent (4–5 min). Add ginger, garlic, and chilies; stir until fragrant (2 min).
