  • 2 cups warm water

  • 2 tablespoons extra virgin olive oil

  • 1½ teaspoons sea salt

  • pinch freshly ground black pepper

  • Filling
  • 5-6 whole artichoke hearts from a tin or jar, sliced

  • ½ red onion, thinly sliced (optional)

  • 12 sun-dried tomatoes, roughly chopped

  • 1-2 tablespoons capers

  • About 12 pitted black olives, halved or sliced

  • A handful fresh dill and 1 tablespoon chives (or any fresh herbs of your choice), finely chopped
