Sweet Fermented Rice is a comforting dish that I first tried on a quiet afternoon at a friend’s house. She had prepared Sweet Fermented Rice for dessert, and the smell of the sweet, fermented flavors filled the air as soon as I walked in. I couldn’t wait to taste it! The dish was soft, creamy, and just the right balance of sweet and tangy, making it an unforgettable treat. Since that day, Sweet Fermented Rice has become one of my favorite recipes to make whenever I want something special.

A Simple Yet Flavorful Dish

Making Sweet Fermented Rice is surprisingly simple, but the flavors develop beautifully over time. The rice is soaked in water and then fermented, giving it a unique taste. Some people like to add sugar to sweeten the dish, while others prefer it just as it is, with the natural tang of fermentation taking center stage. Whether you serve it hot or chilled, Sweet Fermented Rice is a versatile dish that can be enjoyed any time of the day. The best part is that you can easily adjust the sweetness to your liking, creating a version that feels just right for you.

Health Benefits of Sweet Fermented Rice

What makes Sweet Fermented Rice even more interesting is its health benefits. The fermentation process adds good bacteria to the rice, which is great for digestion. It’s not just a tasty treat but a nourishing dish that can aid your gut health. Some say it even helps boost energy levels, making it an ideal dish to enjoy after a long day. For those who are looking for a natural way to improve their well-being, Sweet Fermented Rice is a delicious choice.

A Family Favorite

Sweet Fermented Rice has become a family favorite in my home. It’s a dish that brings everyone together, from the youngest to the oldest, with its soft texture and comforting taste. Over the years, I’ve shared the recipe with friends and family, and each time I make it, there’s something special about how it brings people together. If you haven’t tried Sweet Fermented Rice yet, I highly recommend giving it a go – you might just find it becoming a new tradition in your kitchen.

Chef’s Notes- Sweet Fermented Rice

  • Use Fresh Yeast for Best Results: Always ensure that your Chinese wine yeast (jiu qu) is fresh for optimal fermentation. Old or expired yeast can result in a weak fermentation process, affecting the flavor.
  • Soaking Time is Key: Soak the glutinous rice for at least 6 hours, preferably overnight, to ensure even cooking and a soft, plump texture. This step is crucial for the rice to absorb enough moisture for fermentation.
  • Steaming Technique: Use a bamboo steamer for the best results. Make sure to line it with clean cloth and poke small holes for air circulation, which prevents the rice from becoming soggy during the steaming process.
  • Monitor the Fermentation Temperature: Fermentation is temperature-sensitive. Ideal temperatures range from 77°F to 82°F (25°C to 28°C). If your kitchen is cooler, you can place the rice in a warm spot or use a fermentation box or yogurt maker to maintain a consistent temperature.
  • Flavor Customization: While osmanthus flowers and goji berries are traditional, feel free to experiment with other flavors like jasmine flowers, lavender, or even dried rose petals. This adds a personal touch and variety to your sweet fermented rice.
  • Dilution to Taste: After fermentation, you can adjust the sweetness and alcohol levels by diluting the fermented rice with more cooled water. For a sweeter taste, add more water; for a stronger alcohol profile, use less water.
  • Sterilization is Essential: Ensure all utensils, bowls, and containers used for fermentation are thoroughly sterilized to avoid contamination or mold growth during the process.
  • Make It a Dessert or Side Dish: Sweet fermented rice can be used in various ways. It works as a dessert on its own, or you can serve it as a base for other traditional desserts like tang yuan (sweet rice dumplings) or douhua (tofu pudding).

Ingredients

  • Grains
  • 1 1/4 cups dried glutinous rice

  • Fermentation Agents
  • 2/3 tsp Chinese wine yeast (jiu qu)

  • Liquids
  • 2/3 cup cooled boiled water or bottled water

  • Optional Enhancements
  • rose petals, osmanthus flowers, or goji berries for added flavor and garnish

  • Alternative Ingredients:
  • Glutinous Rice: Substitute with short-grain sushi rice or mochi rice if unavailable.

  • Chinese Wine Yeast jiu qu: Replace with Japanese koji or baker’s yeast in a pinch.

  • Water: Use filtered water instead of boiled water for better flavor.

  • Flavorings: Use honey or maple syrup instead of rose or osmanthus for sweetness.

Directions

  • Soaking the Rice – Begin by immersing the glutinous rice in water for at least 6 hours or overnight. Ensure the grains are fully saturated and softened to the point where they can be easily broken with your fingers.Sweet Fermented Rice_post2
  • Steaming Process – After soaking, thoroughly rinse and drain the rice using a colander. Spread the rice in a thin layer within a bamboo steamer lined with cloth, making several small holes for airflow. Steam over medium-high heat for approximately 40-50 minutes until the rice is cooked to a plump yet firm texture.Sweet Fermented Rice_post4
  • Preparing for Fermentation – Transfer the steamed rice to a sterilized mixing bowl and allow it to cool until it’s lukewarm (about 82°F). If using yeast balls, grind them into a fine powder. Gradually mix the wine yeast and water into the rice, ensuring each grain is evenly moistened without excess liquid.
  • Fermentation Setup – Gently press the rice mixture into the bowl, creating a small well in the center. Cover the bowl loosely with plastic wrap or a sterilized lid and place it in a warm environment. Allow the mixture to ferment for 24 to 72 hours, checking daily until the well is filled with a sweet, slightly alcoholic liquid.
  • Finishing and Storing – Once the fermented rice reaches your desired sweetness and alcohol level, dilute it with 3/4 to 1 cup of cooled water. Transfer the mixture to airtight jars and refrigerate. Use the sweet fermented rice within one week, or longer depending on taste preference.Sweet Fermented Rice_post5

FAQ-  Sweet Fermented Rice

How long should I ferment the rice?

The fermentation time can range from 24 to 72 hours, depending on the temperature of your environment. You can check the sweetness and alcohol level daily to determine when it reaches your desired taste.

Can I substitute glutinous rice with regular rice?

Glutinous rice is ideal for this recipe due to its sticky texture, which holds the fermentation liquid. If you can’t find glutinous rice, short-grain sushi rice or mochi rice can be used as alternatives.

What if my fermentation process takes longer than expected?

If fermentation is taking longer, it’s likely due to cooler temperatures. Try using a yogurt maker or placing the rice in a warm area, like on top of the fridge, to maintain a steady heat.

Can I use a different type of yeast?

While Chinese wine yeast (jiu qu) is traditional, you can use Japanese koji or even baker’s yeast in a pinch. However, these substitutions may alter the flavor profile slightly.

How long will the sweet fermented rice last in the fridge?

If stored in an airtight container, sweet fermented rice will last up to one week in the fridge. The flavor may continue to develop and mature the longer it is stored, but be mindful to check for any signs of spoilage.
