  • Use Fresh Yeast for Best Results: Always ensure that your Chinese wine yeast (jiu qu) is fresh for optimal fermentation. Old or expired yeast can result in a weak fermentation process, affecting the flavor.
  • Soaking Time is Key: Soak the glutinous rice for at least 6 hours, preferably overnight, to ensure even cooking and a soft, plump texture. This step is crucial for the rice to absorb enough moisture for fermentation.
  • Steaming Technique: Use a bamboo steamer for the best results. Make sure to line it with clean cloth and poke small holes for air circulation, which prevents the rice from becoming soggy during the steaming process.
  • Monitor the Fermentation Temperature: Fermentation is temperature-sensitive. Ideal temperatures range from 77°F to 82°F (25°C to 28°C). If your kitchen is cooler, you can place the rice in a warm spot or use a fermentation box or yogurt maker to maintain a consistent temperature.

  • Glutinous Rice: Substitute with short-grain sushi rice or mochi rice if unavailable.

  • Chinese Wine Yeast jiu qu: Replace with Japanese koji or baker’s yeast in a pinch.

  • Water: Use filtered water instead of boiled water for better flavor.

  • Flavorings: Use honey or maple syrup instead of rose or osmanthus for sweetness.

Spread the rice in a thin layer within a bamboo steamer lined with cloth, making several small holes for airflow. Allow the mixture to ferment for 24 to 72 hours, checking daily until the well is filled with a sweet, slightly alcoholic liquid.
