  • 1/2 cup uncooked quinoa

  • 1 large ripe mango diced (about 1 cup)

  • Cherry Tomatoes
  • 1 pint cherry tomatoes halved

  • Red Onion
  • 1/4 cup finely chopped red onion

  • Jalapeño Pepper
  • 1 small jalapeño pepper seeded and finely minced

  • Fresh Cilantro

  • Lime Juice
  • juice and zest of one lime

  • Extra-Virgin Olive Oil
  • 1/4 cup extra-virgin olive oil

  • Kosher Salt

Directions

  • Cooking Quinoa – Rinse the quinoa thoroughly in a fine mesh sieve until the water runs clear. Place it in a medium pot with 1 cup of water and a pinch of kosher salt.
