A Discovery in the Kitchen

My Favorite is Cheesy Broccoli Patties and I remember the first time I made Cheesy Broccoli Patties. It was a lazy Sunday afternoon, and I was rummaging through my fridge, looking for something quick and easy to make. I spotted some leftover broccoli and a block of sharp cheddar cheese. Inspiration struck, and I decided to experiment a little. Little did I know that this simple combination would turn into a family favorite.

Mixing Up Magic

As I chopped the broccoli into small pieces and steamed them lightly, I could already imagine the savory patties coming together. In a mixing bowl, I tossed the broccoli with almond flour and Cajun seasoning, giving it a bit of a kick. Adding beaten eggs and finely shredded cheddar cheese, I mixed everything thoroughly. The bright green broccoli and golden cheese made for a colorful and promising mixture.

The Sizzle of Success

Heating up my trusty cast iron skillet, I added a tablespoon of avocado oil and waited for it to get hot. I divided the broccoli mixture into four portions and spooned them into the pan, forming patties. The satisfying sizzle as they hit the hot surface was music to my ears.   • Ensure your broccoli is fresh and free from yellowing or wilting. Fresh broccoli will provide the best flavor and texture for the patties.
  • Don’t overcook the broccoli. Lightly steaming ensures it retains some crunch and doesn’t turn mushy, which is essential for the patties’ texture.
  • For best results, shred your cheddar cheese from a block rather than using pre-shredded cheese. Pre-shredded cheese often contains anti-caking agents that can affect the texture and melting quality.
  • Make sure the eggs are well beaten before mixing them with the other ingredients. This helps in evenly binding the mixture.

  • 8 ounces Broccoli fresh florets and stems, chopped into small pieces

  • 1 cup Sharp Cheddar Cheese finely shredded

  • 2 large Eggs well beaten
