Ingredients

  • Zucchini Mixture
  • 3 ½ cups shredded zucchini (before squeezing out excess water)

  • 1 tsp sea salt

  • Dry Ingredients
  • 1 cup all-purpose flour

  • 1/4 cup nutritional yeast flakes

  • 1 ½ tsp baking powder

  • 1/2 tsp minced garlic

  • 2 green onions, finely chopped

  • Wet Ingredients
  • 1/4 cup melted plant-based butter

  • For Frying
  • 2 tbsp olive oil

Directions

  • Prepare Zucchini – Grate the zucchini and place it in a mixing bowl. Sprinkle with salt and mix well. Let it sit for 10 minutes to draw out excess moisture.
