  • 1 tablespoon nutritional yeast flakes

  • 1 tablespoon freshly squeezed lemon juice

  • 1/8 teaspoon garlic powder

  • 2 cups frozen spinach, thawed and drained

  • 1 cup canned chickpeas, rinsed and drained

  • 3/4 cup cooked quinoa

  • 1/2 teaspoon garlic powder

  • Pinch crushed red pepper flakes (optional)

  • Zucchini Rolls
  • 2 medium zucchinis, sliced lengthwise into thin strips using a mandoline or vegetable peeler

  • Assembly
  • 1 1/2 cups oil-free marinara sauce (store-bought or homemade)

  • 2 tablespoons whole wheat breadcrumbs

  • Fresh flat-leaf parsley for garnish (optional)
