Tropical Avocado Popsicles: A Summer Escape

Tropical Avocado Popsicles are my go-to summer treat. Tropical Avocado Popsicles are a perfect blend of creamy avocado and juicy pineapple, bringing a taste of the tropics to your freezer. As soon as the weather warms up, I find myself craving these refreshing popsicles, which offer a delightful combination of sweetness and zest. Tropical Avocado Popsicles are so easy to make that even on the busiest days, I can whip up a batch and enjoy a moment of tropical bliss.

Simple Preparation for a Cool Treat

Making Tropical Avocado Popsicles is as easy as blending a few ingredients. I start by tossing diced fresh pineapple and a ripe avocado into my blender. Adding a splash of fresh lemon juice and a touch of honey, I blend everything until it’s smooth and creamy. Sometimes, I like to substitute lemon juice with lime for a different citrus kick. This mixture then gets poured into popsicle molds, and I sprinkle each one with a bit of toasted coconut for that extra tropical flair.

Freezing for Perfection

Once filled, the molds go into the freezer for about four hours. This waiting time is worth it when you finally pull out those perfectly frozen popsicles. The hardest part is waiting patiently while the Tropical Avocado Popsicles set. As I peel them away from the molds, the popsicles reveal their vibrant green color, speckled with toasted coconut shreds. They are a sight to behold and a promise of the refreshing treat to come.

With each bite, I get a burst of tropical flavor, and the creamy texture of avocado makes them feel indulgent without being overly sweet. These popsicles are not only a treat but a celebration of summer in every delicious bite.

Chef’s Notes- Tropical Avocado Popsicles

  • Ripeness Matters: Use ripe avocados and pineapples for the best flavor and texture. Overripe or underripe fruits can affect the creaminess and sweetness of the popsicles.
  • Adjust Sweetness: Taste the mixture before freezing. Depending on your pineapple’s sweetness and personal preference, you might need to adjust the amount of honey or lemon juice.
  • Texture Tips: If you prefer a smoother texture, strain the mixture through a fine sieve to remove any pulp or bits of pineapple. This step is optional but can enhance the popsicle’s consistency.
  • Vegan Option: Substitute honey with agave syrup or maple syrup to keep the recipe vegan. Maple syrup adds a slightly different flavor but complements the tropical ingredients well.
  • Tropical Twist: For an extra tropical flavor, blend in a splash of coconut milk or a handful of shredded coconut into the mixture before freezing.

Ingredients

  • Fruit Base
  • 2 cups diced fresh pineapple (about half a medium pineapple)

  • 1 medium ripe avocado, peeled and pitted

  • Sweetener
  • 1 tablespoon honey (or more to taste)

  • Citrus
  • 1 1/2 tablespoons fresh lemon juice (or juice from half a lemon)

  • Topping
  • 1/4 cup shredded coconut, lightly toasted

  • Alternative Ingredients:
  • Honey can be replaced with maple syrup or agave syrup for a vegan option.

  • Lemon juice can be substituted with lime juice for a different citrus flavor.

  • Shredded coconut can be replaced with chopped nuts or granola for added crunch.

Directions

  • Blend Ingredients – Combine the pineapple chunks, avocado flesh, honey, and lemon juice in a blender or food processor. Blend until smooth and creamy, approximately 30-60 seconds. Taste the mixture and add more honey or lemon juice if desired for extra sweetness or tanginess.Tropical Avocado Popsicles_ post 1
  • Freeze Popsicles – Pour the blended mixture evenly into 6 popsicle molds, leaving a small gap at the top to allow for expansion. Sprinkle each mold with about 2 teaspoons of toasted coconut shreds and gently press them into the mixture. Insert the popsicle sticks and place the molds in the freezer for at least 4 hours or until completely frozen.Tropical Avocado Popsicles_ post 3
  • Release Popsicles – To remove the popsicles from the molds, dip them briefly in warm water for 10-20 seconds until they release easily.Tropical Avocado Popsicles_ post 4

FAQs- Tropical Avocado Popsicles

Can I use frozen pineapple instead of fresh?

Yes, you can use frozen pineapple. Just let it thaw slightly before blending to make the process easier. It may result in a creamier texture but will still taste great.

How can I prevent the popsicles from sticking to the molds?

To ensure easy removal, briefly dip the bottom of the popsicle molds in warm water before pulling out the popsicles. This helps release them without damaging the shape.

Can I add other fruits to the popsicles?

Absolutely! Feel free to add other fruits like mango or berries. Just blend them with the pineapple and avocado, keeping in mind that the consistency might change slightly.

How long do these popsicles last in the freezer?

These popsicles can be stored in the freezer for up to 3 months. Ensure they are well-covered to prevent freezer burn.

What can I use instead of toasted coconut for the topping?

You can use chopped nuts, granola, or even a drizzle of dark chocolate as an alternative topping. Each option adds a different texture and flavor to the popsicles.
