  • 2 medium leeks (about 1 1/2 cups) sliced into 1/4-inch half-moons

  • 1/2 pound asparagus (about 2 cups) cut into 1-inch pieces

  • 2 cups baby spinach leaves roughly chopped

  • 2 cups fresh parsley leaves chopped

  • 1 cup fresh cilantro leaves chopped

  • 3 scallions (green onions) thinly sliced

  • 5 oz each fresh tarragon, dill, basil, and chives finely chopped

  • 1 1/2 cups water

  • 1 1/2 cups chickpea flour

  • 1 tsp psyllium husk powder

  • 1/4 cup hemp seeds

  • 1 tsp baking powder

  • 1/2 tsp sea salt

  • 1/2 tsp ground black pepper

  • 1 tbsp white miso paste

  • 2 tsp Dijon mustard

  • 3 tbsp fresh lemon juice

  • 1 clove garlic

  • 1/4 tsp ground turmeric (optional for color)

  • Fresh tomato slices (optional)

Directions
