Discovering a Healthier Fajita Alternative

My Favorite is Cauliflower Fajita Skillet and When I first started looking for ways to eat healthier without giving up on flavor, I never imagined cauliflower would be my new kitchen hero. I’ve always loved fajitas, but the heavy meats and dairy made it difficult to stick to a lighter diet. One evening, as I stared at a head of cauliflower sitting on my counter, an idea popped into my mind—why not use it as a base for a fajita dish? I was skeptical at first, but curiosity got the better of me, and I decided to give it a try.

The Perfect Veggie Combo

I began by slicing the cauliflower into thin florets, hoping they would soak up the spices just like chicken or beef. Along with the cauliflower, I threw in some red bell peppers and onions, which are staples in any fajita recipe.
