  • 5 ounces Baby Spinach Leaves

  • 1 can Artichoke Hearts drained and roughly chopped

  • 2 tablespoons Fresh Chives plus extra for garnish

  • 1 1/4 cups Raw Cashews soaked if not using a high-speed blender

  • 1/2 cup Filtered Water

  • 2 tablespoons Cold-Pressed Extra-Virgin Olive Oil

  • 2 tablespoons Fresh Lemon Juice

  • 1 tablespoon Nutritional Yeast Flakes

  • 1 Garlic Clove peeled

  • 1 teaspoon Fine Sea Salt

  • 1/2 teaspoon Dijon Mustard

  • 1/2 teaspoon Onion Powder

  • Toasted Baguette Slices for serving

Directions

  • Preheat Oven & Prepare Spinach – Preheat your oven to 400°F (200°C). Bring a medium pot of salted water to a boil and prepare a bowl of ice water. Blanch the spinach in boiling water for about 30 seconds until wilted. Quickly transfer to ice water to stop cooking.
