The Inspiration Behind the Dish

Charred Beet Delight is my favorite salad and I’ve always loved cooking with beets. Their bright color and natural sweetness make them one of my favorite vegetables to experiment with. One summer evening, while grilling outside, I had an idea. Why not take the earthy, slightly sweet taste of beets and give them a smoky, caramelized flavor from the grill? That’s when Charred Beet Delight was born. The thought of grilling beets with a drizzle of fresh pesto seemed perfect for a light, healthy dish that still felt special.

The first time I made this dish, I wasn’t sure how my family would react. They enjoy beets, but grilled? That was something new! I prepared the beets just as I imagined – roasting them first to bring out their natural sweetness and then giving them a quick char on the grill. Chef’s Notes-Charred Beet Delight

  • To save time on grilling day, roast the beets up to three days in advance. Store them in an airtight container in the fridge, and they’ll be ready to grill when you are.
  • If you want stronger char marks, make sure your grill is preheated to a high temperature. You can also lightly press the beet slices onto the grill for deeper marks.
  • If you’re making homemade pesto, try adding a handful of spinach or arugula for a twist. It adds more color and nutrients.
  • Sprinkle some crumbled goat cheese, walnuts, or even toasted pumpkin seeds on top for added texture and flavor contrast.
  • No grill? No problem! You can char the beets in a cast-iron skillet on high heat for a similar effect.
