• Use arrowroot for a crisp finish – It creates a light, crunchy shell. Cornstarch or rice flour also work well for variation.

• Fry in small batches – This keeps the oil temperature stable and prevents soggy tofu. Use a thermometer for precision.

• Sauté aromatics separately – Garlic, bell pepper, and scallion whites add color and flavor. Stir-fry briefly to preserve crunch.

• Toss quickly with seasoning – Garlic salt and white pepper should coat the tofu evenly without making it soggy. A final toss seals the flavor.

  • Seasoning Mix
  • 1 tbsp garlic salt or 1 tsp coarse sea salt + ½ tsp garlic powder

  • ¼ tsp ground white pepper

  • Liquids Frying
  • 4 cups water to blanch tofu with 1 tsp kosher salt

  • 12 fl oz neutral oil canola or vegetable for frying

  • 1 tbsp reserved frying oil for stir-fry step

  • Alternative Ingredients
  • Arrowroot powder replaces cornstarch; works for paleo and gluten-free

  • Aquafaba replaces egg for vegan/egg allergy

  • Tamari or coconut aminos replaces garlic salt for low-sodium

  • Avocado oil replaces vegetable oil for higher smoke point

Directions

  • Tofu Blanching – Bring 4 cups of water and 1 tsp kosher salt to a rolling boil (about 3 minutes).   • Drying Breading – Transfer tofu to a colander and let drain for 2–3 minutes. Pat cubes dry with paper towels so the egg and arrowroot adhere properly. In a bowl, whisk your egg (or aquafaba) then dunk tofu pieces, followed by arrowroot powder on a plate—coat each cube in about 5 minutes for even crispiness.zesty-crispy-tofu_post2
  • Frying Tofu – Heat oil in a deep pot or Dutch oven to 375°F (use an instant-read thermometer; ~5 min). Fry tofu in small batches for 4–6 minutes, turning once when golden. Remove with a slotted spoon and drain on paper towels (2 batches total; ~12 min). Optional: keep oil warm for stir-fry.
  • Sauté Aromatics – Wipe out excess oil, then add 1 tbsp reserved oil to a hot pan over medium-high heat (30 sec preheat). Toss in garlic and pepper for 30 seconds until fragrant, then add diced pepper and scallion whites; stir for 20 seconds to preserve color and crunch.
  • Final Toss Serve – Return tofu to the pan, sprinkle the garlic-salt and white pepper mix, and toss continuously for 10 seconds to distribute seasoning evenly.
