    • Beetroot
    • ½ lb beetroot (about 250 g)

    • Garlic
    • 1-2 cloves garlic, adjust to taste

    • Tahini
    • ¼ cup + 2 tbsp high-quality tahini (hulled preferred)

    • Seasonings
    • 1¼ tsp salt, or to taste

    • 1 tsp ground cumin (optional)

    • Liquid
    • ¾ cup cold aquafaba (chickpea water)

    • 4-5 tbsp fresh lemon juice

    • Garnishes
    • Fresh parsley (optional)

    • Black and white sesame seeds (optional)

    • Extra virgin olive oil (optional)

    Directions
