Putting a Spin On the Traditional Hummus

I’ve always been drawn to the rich, earthy flavors of root vegetables, but beets hold a special place in my heart. Their deep, vibrant color is like nature’s paintbrush at work, and every time I slice into one, I’m reminded of how powerful and beautiful food can be. My love affair with beets started during a summer spent in a tiny Mediterranean village, where beets were a staple in every meal. The locals had this magical way of transforming beets into everything from hearty soups to refreshing salads.

One evening, I was invited to a local family’s home for dinner, and that’s where I first encountered beet hummus. It was a simple dish, served in a rustic clay bowl, but it was unforgettable. The creamy texture of the chickpeas blended seamlessly with the sweetness of the beets, creating a dip that was as pleasing to the eye as it was to the palate. I was instantly hooked.

How to Make Beet Hummus Chickpea Dip At Home

When I returned home, I was determined to recreate that experience. I started experimenting in my kitchen, adding my own twists along the way. I wanted to capture the essence of that Mediterranean evening, but also infuse it with a bit of my culinary style. That’s how this Beet Hummus Chickpea Dip was born. It’s a recipe that’s evolved over time, with tweaks here and there to perfect the balance of flavors.

The beauty of this recipe lies in its simplicity. With just a handful of ingredients, you can create something truly special. It’s the kind of dish that sparks conversations at gatherings, with its stunning pink hue and bold flavors. Whether you’re serving it as an appetizer, a snack, or even as a spread on your favorite sandwich, this dip never fails to impress.

Chef’s Notes – Beet Hummus Chickpea Dip

    • Roasting Beets: Roasting the beets enhances their natural sweetness. Don’t skip this step for the best flavor.
    • Flavor Boost: Add a roasted garlic clove to the mix for a deeper, richer flavor.
    • Serving Suggestions: Serve with a drizzle of extra virgin olive oil, a sprinkle of sesame seeds, and chopped fresh parsley for an added layer of flavor and texture. Like your classic hummus, pair this with a Vegan Gluten-Free Pita Bread or work on a variation like this Smoky Red Pepper Hummus recipe.
    • Presentation: The vibrant color of this dip makes it a show-stopper on any table. Pair it with colorful vegetable sticks or pita chips for an appealing presentation.
    • Balancing Flavors: Taste and adjust the seasoning as needed. The sweetness of the beets should balance with the tanginess of the lemon juice and the earthiness of the tahini.

    Ingredients

    • Chickpeas
    • 3 cups cooked chickpeas (approx. 1½ cups dry), skins removed

    • Beetroot
    • ½ lb beetroot (about 250 g)

    • Garlic
    • 1-2 cloves garlic, adjust to taste

    • Tahini
    • ¼ cup + 2 tbsp high-quality tahini (hulled preferred)

    • Seasonings
    • 1¼ tsp salt, or to taste

    • 1 tsp ground cumin (optional)

    • Liquid
    • ¾ cup cold aquafaba (chickpea water)

    • 4-5 tbsp fresh lemon juice

    • Garnishes
    • Fresh parsley (optional)

    • Black and white sesame seeds (optional)

    • Extra virgin olive oil (optional)

    Directions

    • Preheat your oven to 390°F (200°C). Wash the beetroots thoroughly and place them in the center of a large piece of aluminum foil. Drizzle a small amount of water into the foil parcel to create steam during baking. Seal the foil tightly around the beetroots. Bake for about 60 minutes or until a knife easily pierces through the beets. Allow them to cool before peeling off the skins.Beet Hummus Chickpea Dip
    • In a blender or food processor, combine cold aquafaba and fresh lemon juice at the bottom. Add tahini, roughly chopped roasted beetroots, and cooked chickpeas. Blend until smooth. If the mixture is too thick, gradually add more aquafaba or cold water.Beet Hummus Chickpea Dip
    • Once the mixture is smooth and thick, season with salt, cumin (if using), and minced garlic. Blend again to incorporate the seasonings evenly.Beet Hummus Chickpea Dip
    • Transfer the hummus to a serving bowl. Drizzle with extra virgin olive oil if desired. Sprinkle with black and white sesame seeds and chopped fresh parsley for garnish.Beet Hummus Chickpea Dip
