  • 14 fl oz full-fat coconut milk

  • 3 tbsp fresh lime juice

  • 1½ tsp coconut or cane sugar

  • 8 oz tofu puffs or pan-fried tofu cubes

  • 4 cups mixed greens broccoli florets, bok choy leaves, baby spinach

  • 6 oz bean sprouts briefly blanched

  • ¼ chopped fresh cilantro

  • Alternative Ingredients
  • Lemongrass: swap for 2 tsp lime zest + 1 tsp lime juice

  • Broth Development – Pour in vegetable stock and add leftover lemongrass spears and salt. Bring to a gentle simmer, cover, and cook for 30 minutes to deepen flavor. Remove and discard lemongrass. (Simmer ~30 minutes.)
