  • ¼ teaspoon turmeric powder

  • ⅛ teaspoon crushed red chili flakes adjust for heat

  • 15 oz can full-fat coconut milk

  • ½ cup vegetable broth

  • Legumes Greens
  • 29 oz can chickpeas rinsed and drained

  • 2 –3 cups fresh spinach roughly chopped

  • Alternative Ingredients
  • Avocado oil can replace extra virgin olive oil for a milder taste

  • Red onion may be used instead of yellow onion

  • Garlic powder use about 1/4 teaspoon per fresh garlic clove can substitute minced garlic

  • Dried thyme use approximately 1/3 teaspoon per sprig works in place of fresh thyme

  • Canned diced tomatoes can be used in lieu of fresh chopped tomatoes

  • Ketchup use half the amount can serve instead of tomato paste if necessary

  • A mild curry blend may replace the specific curry powder

  • Unsweetened almond milk with a few drops of coconut extract can mimic coconut milk

  • Water mixed with a vegetable bouillon cube can stand in for vegetable broth

  • Cannellini beans can substitute the chickpeas offering a different texture
