Ingredients

  • Zucchini Mixture
  • 3 ½ cups shredded zucchini (measured before squeezing out excess water)

  • 1 tsp sea salt

  • Dry Ingredients
  • 1 cup all-purpose flour

  • ¼ cup nutritional yeast flakes

  • 1 ½ tsp baking powder

  • ½ tsp minced garlic

  • 2 green onions, finely chopped

  • Wet Ingredients
  • ¼ cup melted plant-based butter

  • 2 tbsp olive oil (for frying)

  • Optional for Serving
  • Vegan sour cream

  • Additional chopped green onions

  • Alternative Ingredients:
  • All-purpose flour can be replaced with chickpea flour for a gluten-free option.

  • Nutritional yeast can be substituted with grated vegan cheese.

  • Olive oil can be replaced with avocado oil for frying.

  • Vegan butter can be substituted with coconut oil.

Directions

  • Prepare Zucchini – Grate the zucchini and place it in a mixing bowl. Sprinkle with salt and mix well. Let it sit for 10 minutes to draw out excess water.
