Ingredients

  • 1 ½ tablespoons extra virgin olive oil

  • 1 large yellow onion finely chopped

  • 4 garlic cloves minced

  • 1 teaspoon dried oregano

  • 1 teaspoon dried thyme (or additional oregano)

  • 1 ½ teaspoons sea salt plus more to taste

  • black pepper to taste

  • 1 (5.3-ounce) tube concentrated tomato paste

  • ½ cup dry red wine (optional)

  • 3 cups vegetable stock

  • 1 cup red lentils pre-soaked for 30-60 minutes

  • ¼ cup walnuts finely chopped

  • 1 (14.5-ounce) can crushed tomatoes or hand-crushed whole peeled tomatoes

  • 12-16 ounces pasta of your choice (tagliatelle, pappardelle, fettuccine, rigatoni, penne rigate or gnocchi)

  • 1 tablespoon premium balsamic vinegar

  • fresh flat-leaf parsley or basil for garnish (optional)

Directions

  • Soak the red lentils in water for at least 30 minutes to an hour. Meanwhile, prepare the other ingredients by chopping the onions and garlic and crushing the walnuts. Heat a large Dutch oven over medium-high heat and add the olive oil. Once shimmering, add the chopped onions with a pinch of salt. Cook until they start to brown lightly and form a fond on the pan’s surface (about 5 minutes).
