  • 2 cups vegetable broth

  • ¾ tsp smoked paprika

  • 2 tbsp smooth tahini

  • ½ tbsp tamari

  • ½ tbsp aged balsamic vinegar

  • 8 oz cauliflower florets

  • 2 tbsp vegan butter or neutral oil

  • ¼ cup lite coconut milk or unsweetened oat milk

  • ½ tbsp nutritional yeast

  • 1 tsp kosher salt

  • Build the Lentil Filling – Create a well in the center of the pan, spoon in tomato paste, and let it cook undisturbed until it darkens, around 2–3 minutes. Pour in red wine to deglaze, scraping up browned bits; simmer until alcohol scent fades, about 3 minutes.
