  • 1 1/2 cups dry lentils, sorted and rinsed

  • 4 cups water (1 quart)

  • 6 cups vegetable broth (1 1/2 quarts)

  • Vegetables and Aromatics
  • 3 tablespoons extra virgin olive oil

  • 1 large yellow onion, finely chopped

  • 2 medium carrots, diced (about 1 1/2 cups)

  • 4 cloves garlic, minced

  • Herbs and Spices
  • 1/2 cup sun-dried tomatoes (dry), chopped

  • 1 tablespoon fresh rosemary, minced

  • 1/2 teaspoon dried thyme

  • 1 teaspoon dried marjoram

  • 1 teaspoon smoked paprika

  • 1 teaspoon sea salt

  • 1/2 teaspoon ground black pepper
