 Rustic Vegan Veggie Tart one of my favorite go-to main course and I remember the first time I decided to make my Vegan Veggie Tart. It was a sunny Saturday morning, and I felt inspired to create something fresh and healthy. I gathered all the colorful vegetables I could find—zucchini, bell peppers, and tomatoes. The vibrant colors made me smile, and I could already imagine how beautiful the tart would look. Cooking has always been my way of expressing joy, and today felt like a perfect day to share that joy.

A Simple Crust

To start, I made a simple crust using flour and olive oil. Mixing the dough with my hands felt soothing, like a gentle hug. I rolled it out carefully, making sure it was thin and even. I placed it in a round tart pan, pressing it gently into the edges. As I blind-baked the crust in the oven, the warm, buttery smell filled my kitchen. I could hardly wait for it to be ready! While the crust baked, I chopped my veggies and seasoned them with herbs and spices. The smell of fresh garlic and thyme danced through the air.

Filling with Flavor
