Making the Smoky Chickpea Loaf was easier than I thought. I mashed the chickpeas in a bowl, mixing them with onions, garlic, and spices. The smell was amazing! I added some oats and a bit of barbecue sauce for that smoky taste. After mixing everything well, I shaped the mixture into a loaf and placed it in the oven. Chef’s Notes- Smoky Chickpea Loaf

  • Aim for a mix of partially mashed and whole chickpeas to achieve a hearty texture. This helps the loaf hold its shape without becoming mushy.
  • Sauté the vegetables until they are soft but not overly browned. This will enhance their flavor without losing their texture.
  • If the mixture feels too wet, gradually add more breadcrumbs. The final texture should be moist but firm enough to hold its shape.
  • Incorporate extra flavor by adding sautéed mushrooms, finely chopped bell peppers, or even a pinch of cayenne for some heat.
  • Fresh herbs like thyme or rosemary can be added to the chickpea mixture for a fragrant twist. Smoked paprika can also enhance the smokiness.
  • Allowing the loaf to rest before slicing is crucial. It helps it set and makes serving easier.
  • This loaf pairs wonderfully with creamy mashed potatoes, roasted vegetables, or a fresh salad. Consider drizzling with a balsamic reduction for an elegant touch.
  • Leftover slices can be stored in the fridge for up to 5 days. They can also be frozen for up to 3 months. Reheat in the oven or microwave for best results.

Ingredients

  • Sautéed Vegetables
  • 1 medium onion finely chopped

  • 2 carrots peeled and diced

  • 2 stalks celery sliced

  • 3 cloves garlic minced

  • 1-2 tablespoons olive oil or water for oil-free option

  • Chickpea Mixture
  • 3 cups canned chickpeas drained and rinsed

  • 1 to 1.5 cups breadcrumbs use gluten-free if desired

  • 2 tablespoons ground flaxseed

  • 3 tablespoons nutritional yeast

  • 2 tablespoons soy sauce

  • 2 tablespoons vegan Worcestershire sauce

  • 1/4 cup ketchup

  • 1/2 teaspoon liquid smoke optional for added smokiness

  • Topping
  • 1/3 cup ketchup

  • 1 teaspoon vegan Worcestershire sauce

  • Alternative Ingredients:
  • Olive Oil: Replace with vegetable broth for an oil-free version.

  • Breadcrumbs: Use gluten-free breadcrumbs or rolled oats as a substitute.

  • Soy Sauce: Substitute with tamari for a gluten-free option.

  • Vegan Worcestershire Sauce: Replace with a homemade mix of soy sauce vinegar, and spices.

  • Ketchup: Use tomato paste diluted with water as an alternative.

  • Ground Flaxseed: Substitute with chia seeds or flax meal.

  • Nutritional Yeast: Omit or replace with grated vegan cheese if preferred.

  • Liquid Smoke: Use smoked paprika for a similar smoky flavor without liquid smoke.

  • Chickpeas: Swap with lentils or black beans for a different base.

  • Celery: Replace with bell peppers for those allergic to celery.

Directions

  • Prepare Oven and Pan – Begin by preheating your oven to 375°F (190°C). Lightly grease a 9-inch loaf pan with oil or line the bottom with parchment paper to ensure easy removal of the meatloaf.
  • Sauté the Vegetables – In a large skillet, heat 1-2 tablespoons of olive oil or water over medium heat. Add the chopped onions, diced carrots, sliced celery, and minced garlic. Sauté for about 5 minutes until the onions become translucent and the vegetables soften. Remove the skillet from heat and set the vegetables aside.Smoky Chickpea Loaf_post1
  • Mash the Chickpeas – Transfer the drained and rinsed chickpeas to a large mixing bowl. Using a potato masher or fork, mash the chickpeas until they are well broken up but still retain some texture. For a finer mixture, briefly pulse the chickpeas in a food processor, being careful not to overblend to avoid a mushy consistency.Smoky Chickpea Loaf_post2
  • Combine Ingredients – To the mashed chickpeas, add the sautéed vegetables, breadcrumbs, ground flaxseed, nutritional yeast, soy sauce, vegan Worcestershire sauce, 1/4 cup ketchup, and liquid smoke if using. Stir the mixture thoroughly with a large wooden spoon until all ingredients are evenly combined. If the mixture feels too moist, incorporate an additional 1/2 cup of breadcrumbs to achieve the right consistency.
  • Shape and Bake the Loaf – Press the chickpea mixture firmly into the prepared loaf pan, ensuring an even surface. Cover the pan with aluminum foil and bake in the preheated oven for 30 minutes to allow the flavors to meld.Smoky Chickpea Loaf_post3
  • Add the Topping and Finish Baking – While the loaf is baking, mix together 1/3 cup ketchup and 1 teaspoon vegan Worcestershire sauce in a small bowl to create the topping. After the initial 30 minutes of baking, remove the foil and spread the ketchup mixture evenly over the top of the meatloaf. Return the loaf to the oven and bake uncovered for an additional 15 minutes, allowing the topping to caramelize.
  • Rest and Serve – Once baked, take the loaf out of the oven and let it rest in the pan for at least 15 minutes. This resting period helps the meatloaf set, making it easier to slice without crumbling. Slice the loaf and garnish with fresh parsley if desired before serving.Smoky Chickpea Loaf_post4
