So worth the hype! This viral cookie croissant aka crookie🍪✨ is vegan, gluten free and foolproof!! Ingredients 3 big vegan croissants 1/2 cup oat flour 1/2 cup almond flour 1/2 tsp baking powder 1/4 tsp sea salt 1/4 cup coconut sugar 1/3 cup brown or white sugar 1 tsp vanilla extract 1/2 cup vegan butter 1/2 cup vegan chocolate chips 1 tbsp maple syrup Directions Preheat your oven to 180°C and line a baking sheet with parchment paper. Combine vegan butter with brown sugar and coconut sugar. Whisk until smooth. Add vanilla extract and whisk until combined. To another bowl, add oat flour, almond flour, baking powder, salt and mix together. Add the whipped butter to the dry mixture and fold in until fully combined. Add chocolate chips and fold into the mixture. Slice the croissants with a bread knife horizontally with a knife. Add 2 small scoops of cookie dough in between and layer more on top of the croissant. Brush the crossiant with a little maple syrup for extra sweetness and golden crunch. Repeat for the rest of the croissants. Bake in the preheated oven for about 20-25 minutes until cookie on top is cooked and golden brown. Allow the Crookies to cool slightly on the baking sheet before transferring them to a wire rack to cool completely.   • Vegan butter → Substitute with coconut oil or margarine that is dairy-free

  • Dairy-free chocolate chips → Use carob chips or chopped dark chocolate for allergen variation

  • Plant-based milk → Any non-dairy milk like soy rice, or cashew milk works well

  • Gluten-free puff pastry → Homemade or store-bought vegan phyllo dough can be used but expect variations in flakiness
