  • medium leek or onion, finely chopped

  • 4 cloves garlic, minced

  • 1 pound Yukon gold or waxy white potatoes, diced into small cubes

  • 4 cups vegetable stock or water (or a mix)

  • 1/4 cup fresh dill weed, chopped

  • 1/2 cup fresh parsley leaves, chopped

  • Pinch of crushed red pepper flakes

  • Sea salt and black pepper to taste

Directions
