The Inspiration

One of my Favorite and Creating the Vibrant Beet & Veggie Wrap was a delightful journey for me. One summer afternoon, I found myself craving something light yet filling. I wanted a meal that was quick to prepare but packed with fresh, nutritious ingredients. The idea of combining the earthy sweetness of beets with the crunch of fresh veggies and the zest of pesto seemed perfect. As I gathered the ingredients, I knew I was onto something special with this vibrant beet & veggie wrap.

The First Attempt

My first attempt at making the vibrant beet & veggie wrap was a bit messy but incredibly fun. I spread the vegan basil pesto on the whole wheat tortilla and layered it with mixed greens, cucumber slices, and bell pepper strips. Adding sundried tomatoes and pickled beets gave it a burst of color and flavor. Rolling the wrap took some practice, but the result was worth it. The vibrant beet & veggie wrap looked beautiful and tasted even better than I had imagined.
