Ingredients

  • Sushi Rice
  • 2¼ cups uncooked short-grain white rice

  • 2¼ cups water

  • 1 piece dried kelp (optional)

  • ⅓ cup seasoned rice vinegar

  • Pickled Red Onion
  • ½ red onion, thinly sliced

  • ½ cup seasoned rice vinegar

  • Spicy Mayo
  • ¼ cup vegan mayonnaise

  • 1 tablespoon sriracha sauce

  • splash of lime juice

  • Sushi Rolls
  • 2 small cucumbers, halved and seeded

  • 1 carrot, julienned

  • 1 firm tofu cutlet sliced into sticks

  • 2 avocados sliced

  • splash of lime juice

  • 6 sheets nori (seaweed)

Directions

  • Rinse the short-grain rice until the water runs clear. Place the drained rice in a rice cooker with water and optional dried kelp. Let it soak for 20-30 minutes before cooking. Once cooked, discard the kelp and transfer the rice to a wooden sushi oke or a baking sheet lined with parchment paper. While the rice is hot, pour seasoned rice vinegar over it. Using a rice paddle, gently slice through the rice at a 45-degree angle to mix in the vinegar without mashing the grains.   • Place thinly sliced red onion in a glass jar and cover with seasoned rice vinegar. Set aside. In a small bowl, mix vegan mayonnaise with sriracha sauce and a splash of lime juice.Veggie Sushi Rolls_ post 2
  • Halve and seed cucumbers; slice into strips. Julienne the carrot using a peeler or knife. Slice tofu cutlet into sticks. Halve avocados and remove pits; slice and sprinkle with lime juice to prevent browning. Place a sheet of nori on a bamboo mat with the shiny side down. Spread 1 cup of sushi rice evenly over the nori, leaving a strip at the top edge.
