  • 12 oz daikon radishes peeled and spiralized

  • 1 (8 oz) sweet potato peeled and spiralized

  • Tamari Sauce
  • 2 tablespoons low-sodium soy sauce (tamari)

  • 1 tablespoon packed brown sugar

  • 3 tablespoons fresh lime juice

  • 5 cloves garlic minced

  • 1 teaspoon freshly grated ginger

  • 1 teaspoon Korean chili flakes (gochugaru)

  • Tahini-Lime Sauce
  • 3 tablespoons tahini

  • 2 tablespoons chopped fresh cilantro

  • 2 tablespoons fresh lime juice

  • Vegetable Medley
  • 1½ cups small broccoli florets

  • 1 red bell pepper thinly sliced

  • 1 cup matchstick-cut carrots

  • Toppings
  • 1½ cups fresh mango chunks

  • ¼ cup thinly sliced scallions

  • Lime wedges for serving

  • Alternative Ingredients:
  • Tofu: Replace with tempeh or chickpeas for a different protein source.

  • Daikon Radishes: Substitute with zucchini or cucumber noodles.

  • Sweet Potato: Use butternut squash or regular potatoes.

  • Tamari: Swap with coconut aminos for a soy-free option.

  • Tahini: Replace with almond butter or sunflower seed butter.

  • Mango: Use pineapple or peaches for a different fruity touch.

Directions

  • Pressing Tofu – Cut the tofu block in half crosswise and place it on a plate lined with a clean kitchen towel or paper towels. Top with more towels and another plate. Weigh down with something heavy like canned goods and let it drain for 15 minutes. Preheat your oven to 400°F. Line a baking sheet with parchment paper.
