  • ½ medium red bell pepper cut into thin strips

  • Broth Protein
  • 4 cups vegan chicken-style broth or vegetable broth

  • 1 can 13.5 oz full-fat coconut milk

  • 1 block 16 oz extra-firm tofu, patted dry, cubed

  • Finishing Touches
  • Juice of 1 lime about 2 tbsp

  • 2 tbsp coconut sugar or brown sugar

  • 2 kaffir lime leaves torn (optional)

  • 4 oz rice vermicelli noodles soaked or cooked separately (optional)
