Ingredients

  • Roasted Squash and Chickpeas
  • 2 lbs butternut squash peeled and cubed

  • 2 tbsp olive oil

  • 1 can chickpeas drained and rinsed

  • 2 tsp ground cumin

  • 2 tbsp harissa paste

  • Vegetable Mixture
  • 3 medium onions finely diced

  • 1 leek (white part only), finely chopped

  • 2 cloves garlic minced

  • 1 cup cooked chestnuts chopped

  • 1 cup soft breadcrumbs

  • A handful fresh cilantro chopped

  • 1/4 cup golden raisins

  • 1/2 cup hot vegetable broth

  • Assembly
  • 2 packs filo pastry

  • 1/3 cup unsalted butter melted

  • 1 cup crumbled feta cheese

  • 1 tsp black sesame seeds

  • Honey for drizzling

  • A pinch of red pepper flakes (optional)

  • Sea salt flakes to taste

Directions

  • Preheat the oven to 400°F (200°C). Toss the butternut squash cubes with olive oil and season generously. Spread on a baking sheet and roast for 10 minutes.   • In a large pan, heat another 2 tbsp of olive oil over medium heat. Sauté the onions, leek, and garlic for about 10-15 minutes until softened.
