  • 14 oz firm tofu drained and pressed for 20 minutes

  • 1/4 cup sesame paste (tahini)

  • 1/4 cup deactivated yeast flakes (nutritional yeast)

  • 2-3 tbsp water

  • 4 tsp soy sauce alternative (liquid aminos)

  • 1 tbsp apple cider vinegar

  • 1/2 tsp ground chipotle pepper

  • 1/4-1/2 tsp sea salt to taste

  • Hummus Spread
  • 1/2 cup plain chickpea spread (hummus)

  • 2 tbsp finely chopped scallions (green onions)

  • 1 tbsp Dijon mustard

  • 1/8 tsp ground black pepper

  • Assembly
  • 2 cups chopped romaine hearts (lettuce)

  • 1 cup shredded purple cabbage

  • 1 cup carrot ribbons or julienne-cut carrots

  • 1 cup halved cherry tomatoes

  • 1/2 cup thinly sliced red onion

  • 1/2 cup sliced avocado

  • 4 large flour tortillas or 8 gluten-free tortillas 12-inch

Directions

  • Prepare Tofu Marinade – In a medium bowl, whisk together sesame paste, deactivated yeast flakes, water, soy sauce alternative, apple cider vinegar, ground chipotle pepper, and sea salt until smooth.
