Picture this: I’m cozied up on the couch, endlessly scrolling TikTok, when a Vegan Crookie pops onto my For You Page—a croissant stuffed with gooey cookie dough, baked until golden and practically begging to be photographed. Born at Maison Louvard in Paris and boosted by influencers like @browngirlveganeats (with a jaw-dropping 91 million views!), this hybrid dessert is the definition of 2025’s indulgent yet inclusive food trends. Its crispy layers and melty chocolate chips had me hooked, and I knew I had to recreate it for my vegan and gluten-free crew.

As someone who lives for turning viral treats into dietary-friendly versions, I couldn’t wait to tackle this one. The Crookie’s charm isn’t just its decadence—it’s the joy of sharing something so fun and photogenic. So, I rolled up my sleeves, cranked some music, and got to work in my tiny kitchen. Spoiler: It was a messy, delicious ride, and I’m here to spill all the details!

@browngirlvegan

So worth the hype! This viral cookie croissant aka crookie🍪✨ is vegan, gluten free and foolproof!! Ingredients 3 big vegan croissants 1/2 cup oat flour 1/2 cup almond flour 1/2 tsp baking powder 1/4 tsp sea salt 1/4 cup coconut sugar 1/3 cup brown or white sugar 1 tsp vanilla extract 1/2 cup vegan butter 1/2 cup vegan chocolate chips 1 tbsp maple syrup Directions Preheat your oven to 180°C and line a baking sheet with parchment paper. Combine vegan butter with brown sugar and coconut sugar. Whisk until smooth. Add vanilla extract and whisk until combined. To another bowl, add oat flour, almond flour, baking powder, salt and mix together. Add the whipped butter to the dry mixture and fold in until fully combined. Add chocolate chips and fold into the mixture. Slice the croissants with a bread knife horizontally with a knife. Add 2 small scoops of cookie dough in between and layer more on top of the croissant. Brush the crossiant with a little maple syrup for extra sweetness and golden crunch. Repeat for the rest of the croissants. Bake in the preheated oven for about 20-25 minutes until cookie on top is cooked and golden brown. Allow the Crookies to cool slightly on the baking sheet before transferring them to a wire rack to cool completely. Serve immediately and watch them disappear! #crookie #cookiecroissant #croissantcookie #viralcookiedough #cookiedough #vegan #glutenfree #dairyfree

My Test Kitchen Rollercoaster for the Vegan Crookie

Let me be real: my first Crookie attempt was a total flop. The gluten-free puff pastry turned into a soggy puddle, and I was ready to toss the whole tray in defeat. But there’s something about baking that keeps me coming back—the thrill of cracking the code, the smell of fresh pastry, and that moment when you pull a perfect treat from the oven. After a few tweaks (and a lot of taste-testing), I found the magic combo: chilled cookie dough, a lower oven temp, and a whole lot of patience. My kitchen smelled like a vegan bakery, and I may have done a little happy dance when I nailed it. Here’s how you can skip my mistakes and make this viral treat your own.

Ingredients

  • Dry Mix
  • 1/2 cup finely ground almond flour (certified gluten-free for best results)

  • 1/2 cup gluten-free oat flour (choose brand known for purity

  • 1/4 cup cup unrefined coconut sugar, for that subtle caramel depth

  • 1/4 tsp of coarse sea salt to balance sweetness

  • Wet Elements
  • 1/3 cup plant-based vegan butter, softened to room temperature for creaminess

  • 1 tsp pure vanilla extract to enhance flavors

  • 1 tbsp unsweetened oat milk or any preferred plant-based milk (optional, only if dough feels dry)

  • Chocolate Component
  • 1/2 cup dairy-free chocolate chips, allergen-safe variety preferred

  • Alternative Ingredients:
  • Almond flour → Substitute with sunflower seed flour for nut allergy-friendly option

  • Oat flour → Use gluten-free all-purpose flour for a lighter texture

  • Coconut sugar → Replace with allulose or stevia-based blend for low-sugar alternative

  • Vegan butter → Substitute with coconut oil or margarine that is dairy-free

  • Dairy-free chocolate chips → Use carob chips or chopped dark chocolate for allergen variation

  • Plant-based milk → Any non-dairy milk like soy rice, or cashew milk works well

  • Gluten-free puff pastry → Homemade or store-bought vegan phyllo dough can be used but expect variations in flakiness

Directions

  • – Preparing the Dough – Begin by placing the softened vegan butter and coconut sugar into a large mixing bowl. Using a wooden spoon, cream these together until the mixture achieves a smooth, creamy consistency, about 3-5 minutes. Incorporating air here helps improve softness in the final product.  Vegan Gluten-Free Croissant Cookie_post
  • – Combining Dry Ingredients – Next, stir vanilla extract into the creamed butter mixture, followed by gradually folding in the almond flour, oat flour, and sea salt. Mix gently but thoroughly to create a crumbly dough base. If the dough crumbles excessively, add plant-based milk one teaspoon at a time until the dough holds together nicely, aiming for a workable texture over 2-3 minutes.  Vegan Gluten-Free Croissant Cookie_post2
  • – Chilling Phase – Wrap the dough in plastic or cover the bowl and refrigerate it for at least 30 minutes. This step is critical to prevent the cookie dough from spreading too much during baking, ensuring neat crookie edges.  Vegan Gluten-Free Croissant Cookie_post3
  • – Preparing Pastry Base – Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper to ensure the crookies don’t stick. Unfold the gluten-free puff pastry and cut it evenly into four triangular sections, replicating croissant shapes.
  • – Assembling Crookies – Place one tablespoon of the chilled cookie dough at the wide end of each triangle. Gently roll from the wide end toward the tip, creating a crescent form. Add a teaspoon of cookie dough dollop on top, then sprinkle extra dairy-free chocolate chips for a delicious finishing touch.
  • – Brushing and Baking – Brush each assembled crookie with melted vegan butter, which promotes browning and a shiny surface. Bake in the oven for 20 to 25 minutes or until the pastry is puffed and golden brown. Allow to cool for 5 minutes on a wire rack to set the structure before serving. Optional: For an extra sheen, brush again with melted butter after baking.  Vegan Gluten-Free Croissant Cookie

Notes

  • For guaranteed success, ensure your vegan butter is softened but not melted for creaming. Chilling the dough is non-negotiable—this keeps your crookies firm and less likely to spread. Serve these with a scoop of dairy-free vanilla ice cream or fresh berries for a delicious contrast. Feel free to add chopped nuts or dried fruit into the dough for extra texture and flavor. If you want an even richer chocolate experience, mix in some finely chopped vegan dark chocolate along with the chips.

Troubleshooting My Crookie Fails

Baking can be a wild ride, so here’s how to dodge the pitfalls I hit:

  • Soggy pastry? Bake at 325°F for the first 10 minutes, then crank to 350°F for crispness. I learned this after my first batch looked like a sad pancake.
  • Dough spreading? Chill it for at least 30 minutes—trust me, it’s worth the wait.
  • Can’t find puff pastry? Hunt for Schär’s at Whole Foods, Trader Joe’s, or Thrive Market. If you’re feeling extra, try a DIY gluten-free puff pastry recipe online (but I’ll stick to store-bought for sanity).
  • Not picture-perfect? Don’t stress—my first Crookies were wonky, but they still tasted like heaven. Keep practicing, and you’ll be TikTok-ready in no time.

This TikTok Vegan Crookie Is Going Viral and Here’s Our Gluten-Free Version 3

How It Stacks Up to the Original

The classic Crookie from Maison Louvard is a buttery dream, but I’m obsessed with how our vegan, gluten-free version holds its own. The gluten-free puff pastry gives a light, flaky crunch, and the coconut sugar in our cookie dough adds a cozy caramel note that makes my kitchen smell like a holiday. Compared to @simplegreensoul’s high-protein Crookie (loaded with protein powder), mine’s simpler for those of us who just want to bake without a science degree. I also tried @browngirlveganeats’ oat-almond dough, but I love how our vegan butter base brings a richer, chewier vibe. You might miss the ultra-buttery croissant feel, but this version’s so indulgent, I forgot all about the original.

The Verdict

Is this Crookie worth the TikTok hype? Oh, absolutely. It’s crispy, gooey, and so fun to make that I caught myself grinning like a kid while pulling apart those flaky layers. I served these at a brunch, and my friends—vegan and non-vegan alike—went wild, fighting over the last one. I had to hide a couple in the back of the fridge for myself (no shame!). Pair it with a scoop of vegan vanilla ice cream or a steamy latte, and you’ve got a dessert that’s ready for its TikTok close-up.

Storage Tips: Stash leftovers in an airtight container in the fridge for up to 4 days or freeze for a month. Reheat in a toaster oven at 325°F for 5–7 minutes to bring back that fresh-baked magic. Whatever you do, skip the microwave—it’s the enemy of crispiness.
