It’s the perfect blend of flavors and textures, making it a favorite among my friends and family.

Cooking the Perfect Stir Fry

I remember the first time I made this Tofu & Kale Stir Fry Delight. The kitchen was filled with the wonderful aroma of garlic and ginger sizzling away. As I tossed the tofu in curry powder and tamari, the cubes turned golden brown and crispy. The kale and red cabbage, quickly stir-fried to just the right tenderness, added a burst of color and crunch.   • Even Cooking: Cut the tofu into even-sized cubes to ensure they cook evenly and get crispy on all sides.
  • High Heat for Stir-Fry: Use high heat when stir-frying the vegetables to retain their vibrant color and crisp texture.
  • Quick Cooking: Stir-fry the vegetables quickly to avoid overcooking and to keep them slightly crunchy.
  • Batch Cooking Tofu: If the tofu doesn’t fit in the pan in a single layer, cook it in batches to ensure it crisps up nicely.

Ingredients

  • Crispy Tofu
  • 1 block firm tofu 7 ounces

  • 1 1/2 teaspoons curry powder

  • 1 tablespoon tamari or soy sauce

  • Stir Fry
  • 1/4 head red cabbage thinly sliced

  • 3-4 large kale leaves stems removed and chopped

  • 1 large carrot julienned or spiralized

  • 1 clove garlic minced

  • 1-inch piece fresh ginger minced

  • 2 tablespoons tamari or soy sauce

  • 2 portions whole wheat noodles

  • Alternative Ingredients
  • Tofu

  • Tempeh or seitan for a different texture.

  • Soy Sauce

  • Coconut aminos for a soy-free option.

  • Whole Wheat Noodles

  • Rice noodles or zucchini noodles for gluten-free.

Directions

  • Combine Ingredients: In another nonstick pan over high heat with a little oil, add garlic and ginger. Cook for 1 minute until fragrant.
