I remember the first time I made this Tofu & Kale Stir Fry Delight. The kitchen was filled with the wonderful aroma of garlic and ginger sizzling away. As I tossed the tofu in curry powder and tamari, the cubes turned golden brown and crispy. Ingredients

  • Crispy Tofu
  • 1 block firm tofu 7 ounces

  • 1 1/2 teaspoons curry powder

  • 1 tablespoon tamari or soy sauce

  • Stir Fry
  • 1/4 head red cabbage thinly sliced

  • 3-4 large kale leaves stems removed and chopped

  • 1 large carrot julienned or spiralized

  • 1 clove garlic minced

  • 1-inch piece fresh ginger minced

  • 2 tablespoons tamari or soy sauce

  • 2 portions whole wheat noodles

  • Alternative Ingredients

  • Tempeh or seitan for a different texture.

  • Coconut aminos for a soy-free option.

  • Rice noodles or zucchini noodles for gluten-free.

Directions
