  • Citrus and Herbs
  • 1 medium orange

  • tablespoon freshly squeezed lemon juice

  • tablespoon finely chopped fresh cilantro

  • tablespoon finely chopped fresh parsley

  • Spices
  • 1/2 teaspoon ground flaxseed or chia seeds

  • 1/4 teaspoon ground cumin

  • 1/4 teaspoon ground coriander

  • 1/8 teaspoon freshly ground black pepper

  • Vegetables
  • 1 cup shredded carrots

  • 1 cup shredded beets (scrubbed clean)

  • 1 cup diced cucumber (seeds removed)

  • 1/2 cup finely diced red onion

  • Greens and Garnish
  • 4 cups fresh baby spinach or mixed salad greens

  • 1 tablespoon golden raisins

  • 1 tablespoon shelled roasted pistachios

  • Sea salt to taste

  • Alternative Ingredients:
  • Orange: Replace with grapefruit for a tangier flavor.

  • Lemon Juice: Substitute with lime juice.

  • Fresh Cilantro: Use fresh basil or mint.

  • Fresh Parsley: Replace with fresh dill.

  • Flaxseed Meal: Use chia seeds or omit if unavailable.

  • Golden Raisins: Substitute with dried cranberries or currants.

  • Pistachios: Use almonds or walnuts.

Directions

  • Prepare Citrus – Slice off both ends of the orange and stand it upright on a cutting board. Carefully cut away the peel and white pith in vertical strips following the curve of the fruit. Over a bowl to catch the juice, slice between the membranes to release the orange segments.
  • Mix Dressing – In a medium mixing bowl, combine the lemon juice, chopped cilantro, chopped parsley, ground flaxseed (or chia seeds), ground cumin, ground coriander, and freshly ground black pepper. Stir well to blend the flavors.
  • Combine Vegetables – Add the orange segments and their juice to the bowl with the dressing. Then add the shredded carrots, shredded beets, diced cucumber, and finely diced red onion. Toss everything together until well mixed.
