    • 2.5 lbs Yukon Gold potatoes peeled and cut into thick wedges

    • Broth Mixture
    • 1 1/2 cups low-sodium chicken broth

    • 1/2 cup extra virgin olive oil

    • 1/3 cup freshly squeezed lemon juice

    • 5 cloves garlic finely grated

    • 1 tbsp dried oregano

    • 2 tsp sea salt
